Oily fish are rich in Omega-3 fatty acids for brain function and concentration. Try to give your children oily fish once a week. Try making these quick and easy fish fingers – who said you have to have fish on Fridays!
Ingredients – makes 6 portions
450g salmon (skinless & boneless)
50g plain flour
1 egg lightly beaten
50g breadcrumbs
1-2 pinches of paprika
Cut the fish into thick lengths. Combine the breadcrumbs and paprika. Coat each fish piece in flour and then dip into the egg. Finally roll each fish length in the breadcrumbs and place on a baking tray and cook for 10 minutes or until golden brown.
