Chickpea Salad with Crumbed Feta

I’ve lost count the amount of times people have asked me for this recipe!  It’s so tasty and more importantly, so easy to make!  Here’s how;

Ingredients (serves 4 – 6):

1 x 400g tin of cooked chickpeas (drained)

1 small red onion, finely chopped

1 small punnet of cherry tomatoes, quartered

1 red pepper, diced

1/2 cucumber, diced

1 clove garlic, crushed

1tbsp chopped mint

1tbsp extra virgin olive oil

1/2 juice of a lemon

1/2tsp honey

sea salt & pepper

100g feta cheese, crumbled

Method:

Nothing to it really, just mix all the ingredients together and serve.  It is lovely with BBQ meat or chicken but also nice as a filling in a warmed pitta pocket.  Enjoy!
